Should I just stick with PC2100 or will this board definitly run PC2700?

Memory is locked to the CPU FSB on this board, so if you are not
overclocking, PC2100/DDR266 is fine.

PC2700/DDR333 will work, but only at PC2100 speeds. I think PC2700 is now
cheaper than PC2100 anyway??

If you get the faster stuff, you can re-use later if you upgrade.
Most boards now need PC2700/DDR333 as minimum.
The newest 800FSB P4 boards need PC3200/DDR400 RAM.

I'm using 4 x PC2700 DIMMs on my 8INXP board.
