Which AMD based board should I go with for an installation of one of
the million distros of Linux? I'll probably go with Redhat or
Mandrake. Either way, should I go with VIA's chipset or nVidia's?
Since most boards have built in ethernet and sound, which ones do we
know have Linux drivers?

I'd go with the Via chipset mobo. The Linux distros should have built
in driver support for most parts of those mobos. I have an nforc2 board
and it's a hassle recompiling the nvidia drivers each time I want to
upgrade the kernel.
