Ok. I read about Dual Channel Memory, but Still don't understand:
So, is using two 1 gig sticks in Dual mode of more use than 3 sticks in
single?
Can/does the LanParty Ultra use 3 in duel with the 3rd being single?

Yep, it should work ok as long as the memory has the same speed and latency.

Slot 1 + 2 = Channel 1
Slot 3 = Channel 2

Channel 1 + Channel 2 = DDR<!-- ~MESSAGE_AFTER~ -->
