Do people who use GG ever read manuals?

You could at least tell us what make and model
number of server you are referring to. If you want
some info, try
http://www.crucial.com ("Memory Advisor")
and use their search engine, to see what products
will work. If PC2700 is an option, it will be shown
in the product list for your "SERVER".
But if you want comments here, you'd better tell
us the make and model number

In my experience and from what I've read, PC2700 will always work when
PC2100 is called for. Also I've always been able to use PC3200,
except at the slowest BIOS setup timings, such as those used when the
safe defaults are chosen. >> Stay informed about: PC2100 PC2700 Memory compatibility |

That is true if all other things (Chip density/configuration) are equal.
If the 2700 has different (lower) number of chips, motherboard may not
recognise full amount of RAM!
Best is to check Crucial wabsite.

We offer a "value added" service here. If you tell us
more about the computer you are upgrading, we provide
warnings as appropriate. The Crucial site doesn't
tell you everything.
For example, if the device is a server, then it could
use "registered" versus "unbuffered" memory. You have
to buy the right type for it to fit in a server socket.
